All of Olivella vineyards are located in the Frascati territory.
The area of the Frascati Doc includes around 3.000 hectares of vineyards.
Nowadays Frascati Doc Superiore is obtained with grapes from vineyards cultivated with Guyot training from which, on avarage, 80 quintals of grapes per hectare are produced instead of the 130 quintals per hectare allowed by Doc regulations.
The lower productivity and the implantation density of around 4.500 plants per hectare are a guarantee of higher quality standards.
