    L’Olivella is a young and dynamic wine estate and farm. While preserving its strong ties with the local culture and tradition, it pays constant attention to innovation.
L’Olivella was founded in 1986 thanks to the happy intuition of Umberto Notarnicola, an expert winegrower from Apulia, and Bruno Violo, a determined oenologist from Piedmont, both in love with the Latium region.



    Since 2003, L’Olivella has followed organic regulations both in the 12 hectares of vineyards and in the 30 hectares of olive groves.

    The soil, rich in minerals (potassium, phosphorus, calcium and magnesium) and poor in nitrogen, is the ideal substratum for the cultivation of vines which have a short Guyot training. The density of implantation (4.500 – 6.000 plants per hectare) guarantees a high quality viticulture adopting the most innovative vine-growing techniques. The production is limited to 70-80 quintals per hectare, depending on the grape variety.

    The wine estate is always open to receive the visit of wine lovers and consumers who would like to understand how quality wines are made and, during grape harvesting, to see how the “cooling technique” is applied.
